What you need:
2 large zucchinis cut in half ( 4 halves)
1 pound Ground Beef
1 onion
4 cloves garlic (minced)
4 ounces tomato sauce
2 cups spinach
1 cup cheese (I used Monterey Jack, any will work)
1 teaspoon salt
1 teaspoon pepper
Let's get cooking!
Preheat oven to 400 degrees.
Cut the ends off the zucchini then cut in half lengthwise and use a spoon to scoop out the the inner flesh. Cut the inside flesh up into small pieces and set aside, we will add it back to the filling. Place zucchini halves on large baking sheet.
Chop up the onion into small bites and mince the garlic. Grate cheese.
In a large pan over medium heat add ground beef and onions.
Once the beef is browned, add the garlic, zucchini flesh and tomato sauce.
Season with salt and pepper and let simmer for 3 to 4 minutes.
Stir in the spinach and let it simmer until the spinach is wilted and beef is fully cooked.
Add the filling to the center of the zucchini boats.
Top with your choice of cheese.
Put in the oven and bake until the zucchini is tender and cheese is brown, about 20 minutes.
Remove from oven and ENJOY!
