What you need:
1 1/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1 large egg
1 1/4 cups milk (I use whole milk)
3 Tablespoons sugar
2 Tablespoons melted butter
1/2 cup pumpkin puree
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon cloves
How you do it:
Mix flour, baking powder, baking soda, and salt in a large bowl.
Once combined, add egg, milk, sugar, and melted butter to flour mixture. Mix until all incorporated and there are very few to no lumps present.
Once combined, add pumpkin puree, cinnamon, nutmeg, and cloves. Combine.
Cook batter (of your desired size) on stovetop over medium heat until golden brown on each side. I like to put a thin layer of butter down before cooking mine, but any type of oil works too. Remember, it's best to flip your pancake when they start to get bubbly.
