Sausage-Veggie-Rice Stir Fry

What you need:

  • 2 Tablespoons olive oil

  • 1 cup brown rice (or any rice of your choosing)

  • 1 pound Ground Sausage of your liking

  • 2 stalks celery

  • 1 onion

  • 2 carrots

  • 5 cloves of garlic

  • 1 cup rice (I use brown)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 2 teaspoons Italian seasoning (or fresh herbs of your choosing)

  • 1/2 teaspoon chili powder (optional)

  • salt to taste (I use about 1 teaspoon)

  • pepper to taste (I use about 1 teaspoon)

  • 1/2 cup water (you could also use broth)

Let's get cooking!

  1. Start with your rice, for brown rice I cook it separately in my instant pot (1 cup brown rice, 1 1/4 cup water on high for 20 minutes, with a natural release).

  2. Add 2 Tablespoons olive oil (or oil of your choice) to large pan over medium heat.

  3. While the oil is heating up cut up your onion, carrots, celery and garlic. Add to oil.

  4. Add garlic powder, onion powder, Italian seasoning, chili powder, salt, and pepper to pan.

  5. Add 1/2 cup of water to large pan of veggies and put the lid on, turn down to low heat, and let them steam until they are soft, stirring occasionally.

  6. In another pan, add sausage and cook over medium heat until fully cooked.

  7. When the veggies are soft add the cooked sausage to the large pan as well as the rice and let simmer together for 3 or 4 minutes.

  8. Season more if necessary, then ENJOY!

This meal is great by itself but is also wonderful stuffed in bell peppers or zucchini.

  • If you choose to stuff it add to pepper or zucchini (remove inner flesh) and bake until your vessel is tender (20 to 30 minutes at 400 degrees usually does the trick). I recommend topping with your favorite cheese as well!
