What you need:
Cast Iron Skillet
2 Tablespoons oil of your choosing
2 chicken breasts
2 teaspoons Italian Seasoning (or whatever herbs you have on hand)
1 teaspoon salt (or however much you prefer)
1 teaspoon pepper (or however much you prefer)
4 Tablespoons butter
5 cloves garlic (minced)
Juice from 1 lemon (optional, still delicious without it)
Let's get cooking!
Pre-heat oven to 400 degrees.
Heat your cast iron skillet over medium heat, add oil.
Season chicken with Italian Seasoning, salt, and pepper. You can also do this once it is in the pan if you would rather.
Once skillet is warm, add chicken to the pan. You just want to brown the outside of the chicken, about 5 minutes each side.
While the chicken is browning, melt butter in a small saucepan over medium heat. Add minced garlic and lemon juice to the butter and remove from heat once melted.
Once both sides of the chicken are browned, pour the butter mixture over the chicken.
Use an oven mitt and put skillet into the oven and cook for approximately 30 minutes (depending on size of the chicken) or until chicken reaches 165 degrees F.
