Turkey Rice Soup-Recipe of the Month

What you need:

  • 2 TBSP butter

  • 1 small onion (I use yellow) diced

  • 2 celery stalks diced

  • 2 large carrots diced

  • 6 garlic cloves minced

  • 6 cups turkey broth

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp oregano

  • 1 tsp thyme

  • 1 cup uncooked white rice (you can use other kinds but will need to adjust the cook time accordingly)

  • 2 cups chopped turkey

How to do it:

  1. Melt 2 TBSP butter in large soup pot over medium heat.

  2. Once the butter has melted, add the diced onion, celery, carrots, and garlic.

  3. Cook for 3 to 5 minutes until onions start to get translucent. Stirring constantly.

  4. Add the broth, seasonings, rice, and turkey. Combine

  5. Bring soup to a boil.

  6. Once boiling, bring it down to a simmer and cover. Stir occasionally.

  7. Cook for approximately 20 minutes, or until the rice is fully cooked and vegetables tender.

ENJOY!


If you are not a fan of turkey you can substitute the turkey broth and turkey for chicken.
