White Cheddar Mac & Cheese

What you need:

  • 1 pound of pasta of your choosing (I use elbow)

  • 2 Tablespoons butter

  • 2 Tablespoons all purpose flour

  • 2 cups whole milk

  • 8 ounces cream cheese

  • 8 ounces aged white cheddar (grated) the older and stinkier the better! (Trader Joe's has a great one!)

  • salt to taste

  • pepper to taste

Let's get cooking!

  1. Cook your pasta according to the directions on the box.

  2. Melt butter in a large pan over medium heat.

  3. Once the butter is melted, whisk in the flour.

  4. One the flour and butter are golden brown slowly whisk in the milk.

  5. Once combined, reduce heat to low and simmer for about 5 minutes, allowing the milk to thicken slightly.

  6. Add the block of cream cheese to the pan. Once the cream cheese is fully incorporated add the white cheddar cheese.

  7. Add salt and pepper to taste and cook until the cheeses have melted and combined.

  8. Add the cooked pasta to sauce and combine.


Sometimes I like to add cut up some Kielbasa or some sort of sausage as well!
